- Start by creating your salad dressing. To do this mince your garlic. Then squeeze your lemon juice into the garlic and mix in your mustard, olive oil, salt and pepper to taste. Mix all your ingredients until they are well combined into a uniform liquid.
- Once your dressing is ready, peel and devein your shrimp and add them to skewers. Gently brush each shrimp skewer with a small amount of your dressing.
Grill your shrimp skewers on medium-low heat for approximately three minutes on each side or until they turn a light pink color.
- Once your shrimp are ready, remove the from the grill and set them aside.
Create your salad by adding a handful of fresh greens to each plate.
- Top your greens with cubed watermelon, feta cheese and sunflower seeds.
Lay one shrimp skewer across the top of each of your salads and drizzle a tablespoon of your salad dressing over each shrimp and watermelon salad.
- Serve immediately.
