- Mix the salsas in a pot and heat on stove top until bubbly. Do not boil.
- Cook shrimp as preferred (grilled is best, but saute also works.) Salt and pepper shrimp and marinate in olive oil before cooking. (If using frozen cooked shrimp, reheat in pan with olive oil, salt and pepper.
- While salsa is cooking, heat beans and onions in a small pot on stove until mixture just begins to bubble. Do not boil or add salt -- the beans and seasoned shrimp will be salty enough for the whole dish.
- One flour tortilla at a time, layer first with bean and onion mixture, then cheese, then shrimp, then a small layer of more cheese. Roll each and place in bowls or plates. Spoon warm salsa over top and garnish with sour cream and lettuce. Serve immediately to avoid soggy tortillas.
