Shrimp and Re-fried Bean Burrito with 'Hot' Salsa

This yummy shrimp and re-fried bean burrito calls for hot (as in heated on the stovetop) salsa. Combined with juicy grilled or sauteed shrimp and creamy twice cooked mashed pinto beans with cheese, it's a whole meal in one dish. You can eat it with your hands, but it's messy, so a fork and knife is your best bet. This is best served in an oblong bowl since the salsa is likely to run. Top with lettuce and sour cream for extra flavor.


Select ingredients:


  1. Mix the salsas in a pot and heat on stove top until bubbly. Do not boil.
  2. Cook shrimp as preferred (grilled is best, but saute also works.) Salt and pepper shrimp and marinate in olive oil before cooking. (If using frozen cooked shrimp, reheat in pan with olive oil, salt and pepper.
  3. While salsa is cooking, heat beans and onions in a small pot on stove until mixture just begins to bubble. Do not boil or add salt -- the beans and seasoned shrimp will be salty enough for the whole dish.
  4. One flour tortilla at a time, layer first with bean and onion mixture, then cheese, then shrimp, then a small layer of more cheese. Roll each and place in bowls or plates. Spoon warm salsa over top and garnish with sour cream and lettuce. Serve immediately to avoid soggy tortillas.
