Shrimp Caprese Pasta

Turn everyone's favorite tomato and mozzarella salad into a main course with this effortless and tasty pasta dish. Quick-cooking shrimp and ripe tomatoes make this a quick supper for busy weeknights that won't leave anyone wanting for flavor!



  1. Cook pasta according to package directions.
  2. Season shrimp with salt, pepper, and lemon. In a large skillet, heat 1 tbsp. olive oil over medium heat. Once hot, add shrimp and cook until just done and brightly pink, about 3 minutes per side.
  3. Reduce heat to low and add tomatoes to shrimp mixture and cook two minutes more, stirring often.
  4. Add chopped mozzarella, basil, and cooked pasta to shrimp, tossing well to combine. Drizzle with remaining olive oil and serve immediately.
