Shrimp n Spinach with Sweet Balsamic Drizzle

Fresh spinach with a few shrimp on top doesnâ t sound all that exciting. But this sweet balsamic drizzle, combined with crunchy pumpkin seeds and salty shrimp makes this an easy salad to prepare that packs a punch of flavor.

- Prepare vinaigrette by mixing balsamic vinegar, sugar, salt, pepper and parsley together. Gradually add the olive oil, mixing well as you go.
- Place the spinach in four bowls- mixing dressing into salad is not recommended as the spinach will wilt.
- Drizzle dressing over each salad. Top salads with shrimp and pumpkin seeds and serve. Store dressing in fridge in an airtight container.
