Fresh spinach with a few shrimp on top doesnât sound all that exciting. But this sweet balsamic drizzle, combined with crunchy pumpkin seeds and salty shrimp makes this an easy salad to prepare that packs a punch of flavor.
- Prepare vinaigrette by mixing balsamic vinegar, sugar, salt, pepper and parsley together. Gradually add the olive oil, mixing well as you go.
- Place the spinach in four bowls- mixing dressing into salad is not recommended as the spinach will wilt.
- Drizzle dressing over each salad. Top salads with shrimp and pumpkin seeds and serve. Store dressing in fridge in an airtight container.
