Traditionally, tuna provides the protein in this salad, but using quickly grilled shrimp (or pre-cooked shrimp in a pinch) adds a fresh twist and tons of great flavor to this classic French meal. A crusty baguette makes the perfect side for this flavorful, tangy salad!


Select ingredients:


  1. Steam the green beans in the microwave until crisp-tender, about 5 minutes. Set aside.
  2. Using a small knife, pierce several slits in the potatoes. Wrap in a paper towel and microwave until soft, 5-8 minutes. Set aside to cool. Once cool, slice potatoes to 1/2" thickness.
  3. In a small skillet coated with cooking spray, cook shrimp with a pinch of salt and pepper. Once bright pink, remove from heat.
  4. For the dressing, combine oil, mustard, spices, and lemon juice in a bowl and whisk until well combined. Drizzle dressing over prepared lettuce and toss to combine well.
  5. Divide the prepared lettuce into 6 bowls. Assemble the salad by topping each bowl with an equal portion of shrimp, tomatoes, green beans, potatoes, and eggs. Top with additional dressing if desired.
