Simple Greek Yogurt Pancakes

Greek yogurt pancakes fill you up without weighing you down. Try out these light & fluffy pancakes that only take 20 minutes to make. Start your day right!

- In a large bowl, mix the flours, baking powder, cinnamon, and salt.
- In a separate large bowl, combine the milk, eggs, and vanilla extract. Beat together until fully com-bined. Slowly mix the dry ingredients into the wet ingredients. Once fully combined, mix in the vanilla greek yogurt. (It’s okay to leave a few lumps in the batter for texture!)
- Heat a large non-stick pan over medium heat. Once the pan is hot, add 2 Tbsp. batter, or up to 1/4 cup batter, and spread into about 1/4” thick circles. (Only cook a couple at a time, or as many will fit in the pan without running together.)
- Cook for 2-3 minutes on the first side, then flip. Cook for an additional 1-2 minutes on the other side, or until browned and cooked through. Stack the cooked pancakes onto a plate, and top immediately with warm maple syrup, fresh blue-berries, and bananas (if you like.) Serve warm!
