Traditionally, coleslaw is a combination of cabbage, carrots and either a vinegar-based or creamy dressing. But this recipe switches things up a bit and features a tropical fruit that is a taste of summer – mango – as well as red bell pepper, cilantro and lime. It’s a fresh side dish that pairs perfectly with smoky grilled meats, like chicken, fish and pork.
- Add coleslaw mix, mangos, bell pepper and cilantro to a large bowl and mix to combine.
- Whisk together lime juice, olive oil, honey, salt and pepper. Add to coleslaw mix and toss. Refrigerate for at least 1 hour before serving.
