Get a burrito without the tortilla with this healthy Mexican bowl recipe. A yogurt sauce ties this burrito bowl together perfectly! Add an hint of lime.


Select ingredients:


  1. Cook the rice in salted water, according to package directions. Add salt to the boiling water, if desired.
  2. When the rice is almost done, bring a large sauté pan to medium heat. Cook the lean ground beef with the taco seasoning until completely cooked through, about 3-5 minutes.
  3. Turn the heat to low, add the salsa to the ground beef, and stir to mix it in thoroughly. Once the rice is done cooking, season it with additional salt and pepper, if desired. Divide the sea-soned rice between four bowls, then add the seasoned ground beef to the bowls.
  4. Garnish with avocado slices, chopped tomato, light sour cream, roasted corn, cilantro, and any oth-er toppings of your choice!
