Slow Cooker Cheesy Tortellini Soup

  1. In a saucepan, melt 4 tablespoons of butter on medium heat. Whisk in the 5 tablespoons of flour. Once in a paste like form, add the 3 cups of half and half, then stir until smooth.
  2. In the slow cooker, add the cauliflower, red onion, and vegetable broth. Stir ingredients together. Pour in mix for your sauce pan, cover and cook on high for 2 hours.
  3. After 2 hours, add in the dry tortellini and stir. Cover and cook for an additional 45 minutes.
  4. Once pasta is cooked, stir in 2 cups of sharp cheddar cheese. Let cook and additional 15 minutes until cheese is fully melted.
