- In a saucepan, melt 4 tablespoons of butter on medium heat. Whisk in the 5 tablespoons of flour. Once in a paste like form, add the 3 cups of half and half, then stir until smooth.
- In the slow cooker, add the cauliflower, red onion, and vegetable broth. Stir ingredients together. Pour in mix for your sauce pan, cover and cook on high for 2 hours.
- After 2 hours, add in the dry tortellini and stir. Cover and cook for an additional 45 minutes.
- Once pasta is cooked, stir in 2 cups of sharp cheddar cheese. Let cook and additional 15 minutes until cheese is fully melted.
