- Grease the inside of the slow cooker with cooking spray or softened butter. Layer half of the sausage, spinach, and shredded cheese into the slow cooker. Repeat with remaining sausage, spinach, and shredded cheese.
- In a large glass measuring cup, whisk eggs, whipping cream, salt, and pepper until combined. Pour over the layered ingredients.
- Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours. Or until the eggs are set in the center and browned around the edges. Serve immediately with hot biscuits, if desired, and garnish with thinly sliced green onion.
