Directions

  1. Place ham and freshly chopped carrots, onion and celery in a 5 to 6 quart slow cooker.
  2. Add the three cans of black-eyed peas and fresh collard greens.
  3. Mix spices in chicken broth and pour over all.
  4. Cook on low for 8 to 10 hours, depending on your slow cooker.
  5. Cook boxed rice according to directions on package and add to Hoppin' John dish just before serving.
