Small-Batch Garlic Dill Refrigerator Pickles

Full of flavor, these pickles add extra crunch to a burger, class up tuna salad, or make for a tasty and healthy snack on their own. You can make one pint-sized jar or twelve. Plus, they're super easy and require little clean up!


Select ingredients:


  1. Start by bringing the water, vinegar, and salt to a simmer in a small saucepan.
  2. While that's warming up, add the dill seed and peppercorns to a clean, airtight container (I prefer mason jars).
  3. Smash the garlic, remove the papery exterior, then toss it in with the dill seeds and peppercorns.
  4. Slice the cucumber into chips, trying to keep them as even as possible. Then, move them to the airtight container and try to pack them in as closely as you can.
  5. Carefully pour the hot liquid over the cucumbers. Tap the container a few times to make sure everything settles.
  6. Put on the lid and stick them in the fridge for 48 hours.
  7. Enjoy your healthy, homemade pickles!
