- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, and cook for 4-5 minutes or until the pepper is tender. Add the garlic and cook for 1 minute.
- Add the sausage to the skillet and cook for 5 minutes, until lightly browned.
- Add the zucchini, yellow squash, Italian seasoning, salt and pepper to the skillet and stir to combine. Cook for 6-8 minutes, or until the squash is tender. Remove from the heat and sprinkle with the parsley.
Recipe Tip: Store leftovers in the refrigerator for up to 3 days. Heat a bit of oil in a skillet over medium heat and saute leftovers until warmed through.
