Smoked trout is easy to make at home on the grill. Brown sugar, fresh thyme, and orange rinds bring out the flavor of the rainbow trout. Get the recipe!
- In a bowl, combine the brown sugar, the garlic powder, the onion powder, the salt, the cracked pepper, and the red bell pepper.
- Thoroughly coat both sides of all the trout filets.
- Your smoker should be at 250 degrees, using your choice of wood (alder, oak, maple). Place the filets on greased smoker racks and cook for approximately 2 ½ hours; start checking for doneness after 1 ½ hours by checking the internal temperature of the filets; they need to reach 140 to 150 degrees Fahrenheit.
- Serve with your choice of herbs and lemon wedges.
