Southwestern Veggie Salad

This recipe is a tasty alternative to green salad or potato salad; it’s terrific for potluck meals or a summer picnic. Really quick and inexpensive to make, it’s also delicious heated up as a side dish.

  1. Layer half the corn into a salad bowl and add half the sliced tomatoes.
  2. Dust generously with pepper and lightly with salt and cumin.
  3. Drain and thoroughly rinse the black beans; add them to the bowl.
  4. Spread the diced green chiles on top, then add the rest of the corn and sprinkle with finely minced cilantro.
  5. Drizzle with the oil and serve.
