This recipe is a tasty alternative to green salad or potato salad; it’s terrific for potluck meals or a summer picnic. Really quick and inexpensive to make, it’s also delicious heated up as a side dish.

Layer half the corn into a salad bowl and add half the sliced tomatoes.
- Dust generously with pepper and lightly with salt and cumin.
- Drain and thoroughly rinse the black beans; add them to the bowl.

Spread the diced green chiles on top, then add the rest of the corn and sprinkle with finely minced cilantro.
- Drizzle with the oil and serve.
