Sparkling Fruit and Granola Streusel

This boozy brunch recipe can be made ahead to save precious sleep. Sparkling fruit with a granola streusel topping makes a good morning for everyone!

- Preheat oven to 350. Mix frozen berry medley, lemon zest, lemon juice, and granulated sugar in an 8x8 oven-safe baking dish. Pour in prosecco, and set aside.
- In an oven-safe skillet, mix brown sugar, butter, flour, water, ginger, cinnamon until fully combined and crumbly. Sprinkle in granola, and mix to combine all ingredients. Bake both the brown sugar granola streusel and sparkling frozen fruit for 35-40 minutes, until streusel is browned and fruit is bubbly.
- Remove from oven. Allow to cool at least 20 minutes, until the streusel is cooled enough to touch. Crumble the streusel by hand of with a kitchen utensil, breaking it into very small pieces.
- Spoon two tablespoons of baked sparkling fruit into small, decorate glassware. Top with 1-2 tablespoons of granola. Drizzle granola with extra baked fruit juice, or top with cream if desired. Serve warmed or at room temperature.
