Sparkling wine or champagne is the go-to drink to cheers and make a toast to the holidays and the new year. But, instead of a simple pour of bubbly, mix things up a bit with this Sparkling Pear Mimosa made with a little fresh ginger, raspberries and honey as well. Sound like something you want to make for the adults in the family, but want to make sure the kiddos feel included? Make a mocktail version as well by using ginger ale or club soda in place of the prosecco.
- In a blender, combine pears, ginger and honey. Blend until smooth.
- Pass mixture through a fine mesh strainer and chill.
- Fill a champagne flute with 1 to 2 tablespoons of pear puree and top with prosecco.
- Garnish with raspberries and a pear slice (optional).
