A delightful spinach stuffed chicken that is easy with the light, robust flavor of cilantro.
- Butterfly your chicken breast and put in a container or ziplock bag with the Italian dressing and 1 Tbsp cilantro. Allow this to marinate at least 30 minutes, but longer if you would like. (i sometimes let mine marinate all day)
- Pre-heat oven to 400 degrees. Combine thawed spinach, onion, mushrooms, bell pepper and remaining cilantro in a bowl and mix well. Add salt, pepper, and spices to taste (i like to use fresh pressed garlic)
- Place chicken breast in a greased 9x13 pan and stuff the middle of each breast with a generous amount of the spinach mixture.
- Top with Panko crumbs and bake 35-40 minutes or until chicken is cooked throughout.
