- In a large skillet, melt the butter and saute the onion for a few minutes, then add in the red and yellow peppers. Continue sauteing for another minute or two or until slightly softened.
- Add the chicken broth, garlic powder, onion powder, salt, pepper, cayenne pepper, vinegar, sugar, soy sauce, and chicken. Stir well and continue to heat for several minutes, stirring frequently, until the mixture is thoroughly heated. Add the cornstarch if needed for thickening.
- Stir in the peanuts and serve with the chopped chives on top, if desired.
