- Cut the avocado in half, remove the pit and scoop out the fleshy part. Mash until it has a smooth consistency. Add all other ingredients except tomato and combine until smooth. Add tomatoes and fold in. Season with salt and pepper to taste.
- Sprinkle more crumbled queso fresco for garnish if desired. Add tortilla chips and enjoy!
