Spinach and Rice Burgers

These burgers are easily adaptable to what you might have on hand. Feel free to add cheese or beans to the mix. Use in a bun with your favorite fixings, on a salad or in a wrap.

Place rice and water into a pot and bring to a boil. Turn to low heat and simmer for 40 minutes.

Chop all of your vegetables.
- Saute the onions, garlic and celery in 2 teaspoons of olive oil.

Add the spinach and basil and cook for 3 minutes or until the spinach is wilted.

Mix all ingredients in a mixing bowl.

Form into patties and fry for 5 minutes on each side.
