A crunchy, creamy casserole that is great for potlucks
- Saute the diced onion in the butter over medium heat until soft.
- Mix the spinach, sautéed onion, artichoke, and sour cream together.
- Put half of the spinach mixture into a buttered casserole dish.
- Top with half of the parmesan cheese.
- Layer with the rest of the spinach mixture.
- Top with the remaining parmesan cheese.
- Top with fried onions.
- Bake at 350 degrees for 25 - 30 minutes.
