Spinach Quiche with a Sweet Potato Crust

Makes 1 quiche
Love spinach? Love sweet potatoes? Need to use up some extra eggs? This flavor-filled quiche is a crowd-pleaser.

  1. In a large (10-inch round) baking dish or cast-iron skillet, layer the sweet potatoes slices to cover the entire bottom and up the sides of the dish. Lightly salt and pepper the sweet potatoes and bake in a 375-degree oven for approximately 15 minutes.
  2. In a bowl, whisk together the eggs, the cream, the salt and pepper, the spinach, the onions, the bacon, and the Swiss cheese.
  3. Pour the mixture over the sweet potato crust and return to the oven to bake for approximately 30 minutes.
  4. Serve and enjoy!
