Love spinach? Love sweet potatoes? Need to use up some extra eggs? This flavor-filled quiche is a crowd-pleaser.
- In a large (10-inch round) baking dish or cast-iron skillet, layer the sweet potatoes slices to cover the entire bottom and up the sides of the dish. Lightly salt and pepper the sweet potatoes and bake in a 375-degree oven for approximately 15 minutes.
- In a bowl, whisk together the eggs, the cream, the salt and pepper, the spinach, the onions, the bacon, and the Swiss cheese.
- Pour the mixture over the sweet potato crust and return to the oven to bake for approximately 30 minutes.
- Serve and enjoy!
