A quick and yummy quesadilla
- Heat the oil in a large skillet on medium high heat. Add mushrooms stirring occasionally until golden brown. Remove from pan,add spinach and one tablespoon of water to the skillet,cook for two minutes till wilted. Remove from skillet and turn off heat.
- Spread goat cheese on each tortilla and top with the mushrooms, spinach, tomatoes and cheese. Lay another tortilla on top,press lightly. Heat the skillet and place the quesadilla in it,cook two minutes per side till golden brown and lightly crispy, repeat with other quesadilla.
