Sneak squash into this dish without your picky little eaters even noticing to add not only flavor but nutritional value to the dish!
- Cook pasta as directed on package.
- Drain out all water and place back in pot. Add 1/2 tsp olive oil to cooked pasta and stir.
- While pasta is cooking cut squash and zucchini in fourths long ways and then chunk. Slice and cut onion thin and add all three vegetables to sauce pan with 2 tablespoons of olive oil set on medium heat.
- Add salt and pepper and sauté for 5-7 minutes. Once vegetables are done add sauce and continue cooking until sauce is hot, 2-4 minutes. Place pasta on plate and top with squash sauce. Sprinkle with Parmesan cheese if desired.
