Squash Medley Pasta

Sneak squash into this dish without your picky little eaters even noticing to add not only flavor but nutritional value to the dish!



  1. Cook pasta as directed on package.
  2. Drain out all water and place back in pot. Add 1/2 tsp olive oil to cooked pasta and stir.
  3. While pasta is cooking cut squash and zucchini in fourths long ways and then chunk. Slice and cut onion thin and add all three vegetables to sauce pan with 2 tablespoons of olive oil set on medium heat.
  4. Add salt and pepper and sauté for 5-7 minutes. Once vegetables are done add sauce and continue cooking until sauce is hot, 2-4 minutes. Place pasta on plate and top with squash sauce. Sprinkle with Parmesan cheese if desired.
