- Place the beef roast in a roasting pan. Add the vegetables around the roast. Sprinkle the seasonings on top of the roast and vegetables. Pour the stout beer and apple cider around the roast.
- Cover the pan with aluminum foil. Cook in a preheated 350 degree oven for 3 to 3 1/2 hours, or until the beef and vegetables are tender.
- To make the gravy, dissolve the cornstarch in the warm water, stirring with a spoon. Add the cornstarch mixture to the meat juices in a saucepan or shallow pan and whisk together over medium to high heat. Bring to a boil and then reduce to a simmer, continuing to stir until slightly thickened. Remove from the heat and serve with the sliced beef roast.
