This light and fresh sweet treat is easy to make-ahead and serve. It uses fresh strawberries and real lemons, celebrating two of my favorite summertime fruits ... in dessert form!
Preheat oven to 325 degrees. Using a medium-sized mixing bowl, whisk together milk, preserves, the zest of 1 lemon, and the juice from that same lemon.
In a separate bowl, combine the egg yolks. Beat at the highest speed until they turn light yellow.
Add the yolks to the medium-sized mixing bowl and whisk to combine.
Pour the mixture into the premade pie crust. Bake for 25 minutes, then let cool for 1 hour. Wrap in plastic wrap and place in freezer for at least 3 hours.
Wash your fresh strawberries.
Slice strawberries to top pie. (slicing option is your choice!). If you don't plan to serve immediately, keep loosely covered in refrigerator.
