This quick and easy dessert recipe is creamy, fresh and loaded with sweet strawberry flavor. And since it only takes ten minutes to make, you can satisfy your sweet tooth in hardly any time at all. Additionally, if you would like to make this recipe ahead of time so you and your family can enjoy them throughout the week, simply store this Strawberry Mousse in single portion containers in the refrigerator. You’ll also want to wait to top them with extra whipped cream until it’s dessert time. Then, for the adults in the family, try this chilled treat with a glass of sparkling wine or prosecco, like Vallate brand.

Directions

  1. Set aside 1/2 cup of sliced strawberries for garnish. Place remaining strawberries in a food processor or blender. Process or blend until smooth. Pass strawberry purée through a fine mesh strainer, discard seeds. Add 1/2 cup of sugar and salt and stir until sugar is dissolved. Cover and chill for at least 30 minutes.
  2. Using a stand or hand mixer, whip heavy cream, vanilla and remaining 1 tablespoon of sugar until stiff peaks form. Set aside 1 cup of whipped cream and chill. Gently fold chilled strawberry mixture into remaining whipped cream. Spoon into serving glasses, cover with plastic wrap, and chill for at least 1 hour.
  3. Serve with a dollop of reserved whipped cream, sliced strawberries and fresh mint.

Recipe Tip: For a fun twist and a little extra sweetness, top each serving with mini chocolate chips.
