- Set aside 1/2 cup of sliced strawberries for garnish. Place remaining strawberries in a food processor or blender. Process or blend until smooth. Pass strawberry purée through a fine mesh strainer, discard seeds. Add 1/2 cup of sugar and salt and stir until sugar is dissolved. Cover and chill for at least 30 minutes.
- Using a stand or hand mixer, whip heavy cream, vanilla and remaining 1 tablespoon of sugar until stiff peaks form. Set aside 1 cup of whipped cream and chill. Gently fold chilled strawberry mixture into remaining whipped cream. Spoon into serving glasses, cover with plastic wrap, and chill for at least 1 hour.
- Serve with a dollop of reserved whipped cream, sliced strawberries and fresh mint.
