Strawberry Spoon Cake

Stick to your budget, and end any meal on a high note, with this quick and tasty strawberry spoon cake! This affordably casual style of cake requires only a few ingredients, many of which you probably already have at home in your pantry. It’s an ideal scratch-made dessert to serve up with a side of savings at a dinner party, cookout or picnic.
- Preheat the oven to 350°F and grease an 8x8 inch baking dish. Using a fork, mash strawberries and 1/3 cup of brown sugar together in a large bowl until the berries release their juices. Set aside.
- Whisk the remaining brown sugar, butter and milk together in a large bowl until combined. Fold in the flour, baking powder and salt until just combined.
- Pour the batter into the prepared baking dish. Spoon the strawberry mixture over the batter. Top with the almonds. Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
- Spoon the cake onto plates. Top with the whipped topping and serve.
Substitute: Use fresh or frozen blueberries, raspberries or blackberries in place of strawberries!
