Makes 20 mushrooms
The perfect appetizer for mushroom fans - this recipe utilizes lots of leftover stuffing.

Directions

  1. Reheat the leftover stuffing in a saucepan.
  2. In a skillet, melt the butter, then add the onion, garlic, and parsley, then sauté for approximately 10 minutes.
  3. Add the sautéed onions/garlic to the stuffing and mix to combine.
  4. Add ½ cup of the Parmesan cheese; mix well.
  5. Remove the stems and clean the mushrooms.
  6. Stuff each mushroom with the stuffing mixture (be generous!).
  7. Place the stuffed mushrooms in a greased baking dish.
  8. Sprinkle the remaining Parmesan cheese on the top of each mushroom.
  9. Add the chopped sage leaves and lightly drizzle with olive oil.
  10. Bake in a 350-degree oven for 30 minutes.
  11. Serve and enjoy!
