This recipe is smaller than what you might use for Thanksgiving so that you can make it easily for a weeknight, even in your toaster oven. That makes it a perfect comfort food all year round.

Place the cut up bread pieces in a large mixing bowl.
- Sauté the celery and onion in the oil over medium heat for a couple of minutes.

In a small bowl, whisk together the egg and broth.

Then mix all ingredients together.

Place the stuffing into a heatproof baking dish. Bake for 30 minutes (longer if you like your stuffing less moist).
