No sugar? No problem! There are a number of sugar alternatives on our shelves, many of which can be directly substituted for sugar in baking and cooking recipes. Try your favorite sweetener in these chewy, delectable coconut almond macaroons, which also happen to be gluten-free!
- Preheat the oven to 300°F and line a rimmed baking sheet with parchment paper. Whip the egg whites in a large bowl, using a hand mixer, until stiff peaks form. Fold in the coconut flakes and sweetener until just combined.
- Scoop the coconut mixture, using a tablespoon, and place at least 2 inches apart on the prepared baking sheet.
- Top the coconut mixture with 1 teaspoon of almonds and bake for 20-30 minutes until lightly browned. Let cool at room temperature before serving.
Recipe Tip: Dip each macaroon in melted sugar-free chocolate for an extra-sweet treat!
