Pizza for dessert? That’s right! This Summer Fruit Pizza is fresh and sweet, with a sugar cookie crust, cream cheese spread and topped with a variety of fresh fruit. However, if you don’t have fresh raspberries, blueberries or mango on-hand, feel free to substitute for frozen. Just make sure to allow them to thaw before topping your dessert pizza. You can also swap any of the fruits we’ve suggested with your favorites, like bananas, strawberries and mandarin oranges.
- Preheat the oven to 375°F and spray a 12-inch pizza pan with cooking spray, or line with parchment paper. Unwrap sugar cookie dough and slice into 1/4-inch thick rounds. Using your fingers, press cookie dough evenly into pan, until it reaches the edges. Bake for 10 to 12 minutes, or until light, golden brown. Remove from the oven and set aside to cool.
- Using a hand mixer, beat cream cheese, powdered sugar, vanilla extract, and salt until light and fluffy. Add whipped topping and continue beating until combined.
Spread cream cheese mixture in a thin layer over cookie crust. Arrange fruit in a circular pattern. Garnish with fresh mint and serve immediately.
*Tip: Don’t have a pizza pan? Just press your cookie dough into a 12-inch round on a cookie sheet lined with parchment paper.
