Warmer weather means corn season is upon us, so make the most of this delicious fresh produce with our Summertime Grilled Corn Salad. And since this dish is grilled, it makes it the perfect side to accompany your burgers, hot dogs and other grilled proteins for your backyard cookout or holiday barbecue with family.
- Preheat the grill to medium heat. Add the corn, with the husks on, to the grill and cook for 15 minutes, occasionally rotating the cobs. Remove from heat and allow to cool.
- Add the cherry tomatoes, feta, avocado, red onion and cilantro to a serving bowl. Remove husks from the corn, slice off kernels and add to the bowl.
- Whisk together the lime juice, garlic, mustard, salt, pepper and oil in a small bowl. Pour over the salad and toss to combine. Serve immediately.
