- 45 minutes
- Chop potatoes into 1/2-inch cubes and place in a large bowl.
- Slice the hard boiled eggs and add to the bowl with the potatoes, then chop the celery and red pepper into small pieces and add those as well.
- In a small bowl, combine the mayonnaise, sour cream, vinegar, sugar and mustard, then add the mixture to the large bowl and toss until all ingredients are coated.
- Serve cold.
- Optional: Add 1 cup fresh peas or 1 tablespoon of parsley
