Superior says it all. This Southern Soul potato salad will knock off your socks and leave you running back to the table for seconds. You can't get more out of comfort food as you do with this!
- Chop potatoes into 1/2-inch cubes and place in a large bowl.
- Slice the hard boiled eggs and add to the bowl with the potatoes, then chop the celery and red pepper into small pieces and add those as well.
- In a small bowl, combine the mayonnaise, sour cream, vinegar, sugar and mustard, then add the mixture to the large bowl and toss until all ingredients are coated.
- Serve cold.
- Optional: Add 1 cup fresh peas or 1 tablespoon of parsley
