Sweet and Savory Corn Chowder

Corn chowder is one of those recipes you'€™ll make again and again that never gets old. Even when you'€™re slurping the last spoonful, your taste buds are craving another bowl. Prepared with a combination of ingredients from your Food Lion freezer, fresh herbs, spices, sweet onion and fresh jalapeno, the best thing about this chowder is how versatile it is. It'€™s easy to transform into exciting leftovers: triple the recipe and you can have corn chowder the day you cook it, chicken corn chowder the next day and use it as a base for a creamy Mexican-style cheesy tortilla chips and dip at snack time.



  1. Melt butter and mix in flour to make a roux. Add milk and stir until blended. Add corn and continue cooking, adding onions, hot sauce, Cajun seasoning, red bell pepper and salt and pepper. (Save some of the onions for garnish.)
  2. Gradually add chicken broth and continue to cook until soup thickens. Sprinkle in more flour if necessary to thicken. Once all of the broth is added, add 1 / 2 cup of cheese and continue to stir.
  3. When soup has reached desired thickness, pour into bowls and garnish with more cheese, hot sauce and chopped green onions. Serve immediately.
