Hamburgers and hot dogs taste delicious grilled, but if you’re looking for another protein to grill, try our easy Sweet-and-Spicy Grilled Shrimp recipe! Simply mix up the marinade, toss the shrimp, put them on skewers and grill. That’s all there is to it! And since this recipe incorporates Mexican flavors, use the shrimp for fajitas or in burritos or tacos. Or create a Mexican rice bowl with beans, veggies and cheese.
- In a large bowl, whisk together salt, honey, lime juice, chipotle pepper, adobo sauce, ground cumin and butter until thoroughly combined. Remove 2 tablespoons of marinade and set aside.
- Pat the shrimp dry with paper towels and add to a large bowl with marinade. Toss to coat and refrigerate for 15 minutes.
- Preheat a grill or grill pan over high heat. Drain shrimp and discard marinade. Thread shrimp onto skewers and grill for 2 to 3 minutes per side, until firm and opaque.
Transfer to a platter and brush with reserved marinade. Garnish with cilantro and serve immediately.
*Tip: These sweet-and-spicy shrimp make great tacos! Just pull them off the skewers, tuck a few into a warm tortilla and top with your favorite salsa, chopped red onion and a squeeze of lime.
