This flavorful ham is super moist and has a sweet and spicy kick. Simple to make and will be perfect for your Easter dinner. (Note: if you cannot find plum preserves substitute seedless blackberry preserves)
- In a small saucepan, over medium heat, whisk together the plum preserves, orange mango juice, mustard, brown sugar, ground ginger and a sprinkle of red pepper flakes. Bring to to a boil and then reduce to a simmer. Stir until slightly thickened, about 5 minutes.
- Place the ham in a casserole dish or roasting pan. Spoon over about half of the glaze onto the ham. Bake the ham, uncovered, in a preheated 350 degree F oven for about 2 to 2 1/2 hours, or until completely warm all the way through. Continue to baste with the plum glaze, about every 20 minutes
- Let the ham sit for 10 minutes before carving. Serve with glazed carrots and mashed potatoes.
