Sweet Potato Crisps

A wonderful way to serve sweet potatoes with any meal.

  1. Peel the sweet potato and discard the skins. Toss the skin. With peeler, continue to create long thin strips of the sweet potato until you have used up the potato.
  2. In a medium, deep sided pot (about a 3qt pot or 10" pot) put about 1 1/2" to 2" of oil. Heat the oil to a temperature that will fry the sweet potato strips. (test with 1 potato strip to see if the oil is hot enough)
  3. While the oil is heating up, mix the sugar and cinnamon in a container so you can sprinkle it over the sweet potato crisps after they are removed from the oil.
