Sweet Potato Marshmallow Bars

Indulge in a dessert that combines the beloved flavors of sweet potato with graham crackers, cinnamon and gooey, toasted marshmallows in a bite size treat that will be sure to please.

Begin by mashing the sweet potatoes.

In a large bowl, combine the graham cracker crumbs, the brown sugar, the salt, and butter.

Stir until thoroughly combined.

Line a 9x9-inch pan with parchment paper first (this will make the bars easier to remove later).

Firmly press the graham cracker mixture into a 9x9 pan, then bake in a 350-degree oven for approximately 10 minutes.

In a bowl, combine the sweet potatoes and the brown sugar.

Add the cream and mix.

Add the eggs, the vanilla, the pumpkin pie spice, the cinnamon, and the butter. Mix well.

Pour the sweet potato mixture over the graham cracker crust.

Return to the oven and cook for approximately 50 minutes.

Remove from the oven and top with mini marshmallows (use enough to cover the entire surface of the bars). Broil in the oven for a very short time—just long enough for the marshmallows to brown. (Keep an eye on them or they will catch on fire.)
