Mildly sweet but definitely savory this simple hearty vegan soup would make a filling meal served with noodles. Don’t shy away from the lime juice when seasoning – the acidity really makes the flavor pop!
Chop all of the potatoes and onion.
- In a large pot combine sweet potato, onion, garlic, red pepper flakes, smoked paprika, and vegetable stock and place over high heat. Bring to a simmer and cook for 15 minutes, or until sweet potato is completely tender.
Transfer to a blender and process in batches until smooth, then place back in the pot and bring to a simmer. Add peanut butter and whisk until it’s fully incorporated, then season to taste with salt, pepper, and lime juice and serve with sliced scallions.
