- In a large skillet, place the onions, butter, and 2 tablespoons of brown sugar. Cook the onions for approximately 10 minutes over medium-high heat until the onions are brown and soft.
- Add the ale to the skillet, then cook another 3 to 5 minutes until the ale reduces.
- Add the sweet potatoes, cinnamon, nutmeg, cream, and the remaining 1/3 cup of brown sugar to the skillet. Stir to combine, then continue to cook until the mixture is thoroughly heated.
- Remove from heat and stir in the bacon. Add pepper if desired.
