Sweet Potato Surprise

This creamy veggie side dish has all the nutrition of sweet potatoes and onions while introducing brown ale, brown sugar, and bacon to kick up the flavor.

  1. In a large skillet, place the onions, butter, and 2 tablespoons of brown sugar. Cook the onions for approximately 10 minutes over medium-high heat until the onions are brown and soft.
  2. Add the ale to the skillet, then cook another 3 to 5 minutes until the ale reduces.
  3. Add the sweet potatoes, cinnamon, nutmeg, cream, and the remaining 1/3 cup of brown sugar to the skillet. Stir to combine, then continue to cook until the mixture is thoroughly heated.
  4. Remove from heat and stir in the bacon. Add pepper if desired.
