These loaded sweet potatoes are stuffed to the brim with black beans and spinach for a filling meal that only takes 20 minutes to make.
- Use a fork to puncture the potatoes all over. Place on a microwave-safe plate and microwave on high for 16 to 18 minutes, flipping over halfway through.
- When the potatoes have roughly 10 minutes remaining, heat the oil and garlic in a large skillet over medium heat. Mix in the beans, cumin, cayenne, and 2 tablespoons water, then turn the heat to medium-high and cook for about 2 minutes, until the beans are heated through, stirring occasionally. Add the spinach, sprinkle 1/4 teaspoon salt on top and cook. While cooking, stir until the spinach begins to wilt, roughly after 1 to 2 minutes and then remove from heat.
- Divide the potatoes and sprinkle with 1/4 teaspoon each salt and pepper. Squeeze a lime wedge over each potato, and then add the bean mixture. Enjoy with a spoonful of yogurt, sliced scallions, and extra lime wedges, if desired.
