Rethink tacos with this Mexican-inspired recipe that uses avocado halves in place of your taco shells. It’s a low-carb version, but you can rest-assured that you and your family won’t miss the tortilla. After all, this dish is packed with flavor and extra creamy with a dollop of sour cream and the natural creaminess from the avocado. And here’s a fun fact – if your avocados aren’t quite ripe, place them in a paper bag on your kitchen counter to speed up the ripening process.

- Add ground beef to medium-sized sauté pan set over medium heat and cook until browned. Drain and add chili powder, cumin, garlic powder, oregano, paprika, salt, pepper and tomato sauce. Stir to combine and cook for 2-3 minutes.
- Remove pits from avocados halves and divide meat mixture between each avocado center.
- Top meat mixture with cheese, tomatoes, onions, sour cream and cilantro.
