Looking for easy dinner recipes? This Mexican casserole-like dish is called tamale pie and is a perfect meal idea for any night of the week!


Select ingredients:


  1. Preheat oven to 425 F.
  2. In a large sauté pan over medium heat, cook the ground beef, onions, and taco seasoning mix until beef is browned and completely cooked through, about 5-7 minutes. Crumble the beef as it is cooked to create small pieces. Set aside.
  3. In a large bowl, mix cornbread mix with required ingredients, as directed. Set aside.
  4. Grease a 9x13 baking dish, or large casserole dish, with baking spray. Add ground beef and onion mixture, and spread into an even layer across the bottom of the dish.
  5. Top the ground beef mixture with the cornbread mixture.
  6. Spread the cornbread mixture to cover the surface of the beef, and touch all sides of the baking dish.
  7. Cover dish with foil, and bake 20 minutes.
  8. Carefully remove dish from the oven, uncover, and bake another 15-20 minutes, or until cornbread topping is golden brown.
  9. Remove from oven, and serve warm. Garnish with sour cream and chopped green onions, if desired.
