A filling protein packed vegan salad, this would also be terrific as a filling for fresh rolls, or served on top of rice noodles.

Combine tofu, avocado, cilantro, scallions, lime juice, sesame oil, and ginger in a large bowl and toss to combine. Season to taste with salt then serve garnished with toasted sesame seeds.
