A great vegan entree or side dish.
- Adjust oven rack to middle position and preheat to 375 degrees. Cover squash with foil and place on a baking sheet, cook until tender - about 45 minutes. Remove from oven and let cool. Heat oven to 425 degrees.
- Heat a large skillet over medium high heat, then add the chopped sausage and the onion. Cook until onion begins to soften, about 7 minutes. Add stock or water and bring to a simmer, then add stuffing mix. Turn off heat and cover, then let sit for 5 minutes.
- Fill each halved squash with stuffing, then place back on the sheet pan and cook for 20 minutes or until stuffing has browned and begun to crisp.
