Tomato Pasta

This unique spin on the classic mac 'n cheese introduces tomatoes and mozzarella into this flavorful dish.

  1. In a medium saucepan, cook the macaroni according to package directions until the pasta is al dente.
  2. Drain the pasta and set aside, reserving a 1/2 cup of water.
  3. In a second saucepan, place the 1/2 cup pasta water, tomatoes, butter, garlic powder, salt, pepper, oregano, and basil. Cook over medium heat for 3 or 4 minutes until the tomatoes are softened.
  4. To the sauce, add the macaroni, chives, and mozzarella. Toss until thoroughly coated.
  5. Serve warm.
