Tropical Honey Glazed Ham

We have ham every Easter. It was on of my favorite dishes my mom would make. We couldn't wait for it to be finished. Just smelling it cook was such a tease. This recipe is a spin off to my mom's honey glazed ham. Adding potatoes and other vegetables to the pan saves you so much time becuase you won't have to make other sides. The sweet potatoes soak up the ham's glaze and they taste great! This is perfect for Easter dinner!

  1. Preheat oven to 350 degrees and prepare ingredients.
  2. Thinly slice thick skin off the ham. Leave the thinner outer skin on the ham.
  3. Lightly slice the top of the ham so that the juices can flavor the center.
  4. Steam and slice the sweet potatoes. Add them to an oven safe dish with the ham. Add Cherry tomatoes.
  5. Peel and remove the seeds from the orange. Crush the orange and pineapple together in a small bowl.
  6. In a frying pan on high, sauté sliced onions in olive oil.
  7. Turn heat to low and add brown sugar and soy sauce.
  8. Add pineapple and orange mixture to the frying pan.
  9. Add honey to the frying pan.
  10. Let the ingredients simmer in the pan on low heat for about fifteen minutes.
  11. Add the mixture over the ham.
  12. Add pieces of fresh rosemary, chives, dill and Italian parsley. Sprinkle black pepper, garlic powder, and Italian seasoning over the dish.
  13. Drizzle honey over the baking dish.
  14. Bake for about two hours.
  15. Enjoy!
