Turkey Soup with Butternut Squash

Move over chicken soup! This rendition is not just a terrific way to use leftover turkey, it’s so delicious and comforting- it might just become a weekly staple. It’s okay to use turkey slices you bought from the store.

  1. Place the oil into a saucepan over medium heat.
  2. Gather diced vegetables. Add the onion and garlic and sauté for a minute.
  3. Add the broth and turkey.
  4. Simmer for 7-10 minutes.
  5. Add the tamari, parsley and turmeric.
  6. Simmer for two or three minutes more, adjusting seasonings to your own taste.
