Move over chicken soup! This rendition is not just a terrific way to use leftover turkey, it’s so delicious and comforting- it might just become a weekly staple. It’s okay to use turkey slices you bought from the store.
- Place the oil into a saucepan over medium heat.
Gather diced vegetables. Add the onion and garlic and sauté for a minute.
Add the broth and turkey.
- Simmer for 7-10 minutes.
Add the tamari, parsley and turmeric.
Simmer for two or three minutes more, adjusting seasonings to your own taste.
